		<description>Yeah, evaporated is better than fresh when I&#039;m using it as a cream substitute. A bit thicker due to the evaporation. I also prefer the evaporated for the convenience factor. I always keep a few cans in the cupboard so that it&#039;s there when I need it.

I don&#039;t go so far as to do low fat or skim evaporated, though. That&#039;s just cutting out too much fat for it to be worth eating.</description>
